So god damn good. Dijon herb crusted lamb with English mint creamed peas and Roasted rosemary red potatoes. Made for Easter Shitty attempt at cream puffs and cream puff swans Grilled Lobster on a bed of roasted veggies Liberian style shrimp Shrimp in lemon cream sauce finished with some good ol' butter Some god damn beef the way it's supposed to be done. (I forget the cut used.. awkward) Chicken Chassuer. Super delicious. Cherry and pistachio stuffed rabbit saddle Half crowns of lamb. (Salt, pepper, rosemary) Home-smoked beef brisket. Yissss Veal liver with a lemon cream sauce and onions and bacon. Incredibly rich. Blanquette de Veau Vol au Vent (veal in a bechamel sauce all in a puff pastry with sauteed spinach at the bottom of the pastry) *drools* Monkfish is the freakiest fucking fish I've ever had to work with. tasted pretty good though. Flank steak with pumpkin puree and a yogurt sauce. Sounded weird as hell but it was damn good. My pride and joy. :') First time ever cooking in cast iron and finishing in the oven. Turned out perfect. Cut like butter. *drools* Filet Mignon withsauteed mushrooms and pearl onions Fois Gras. Toasted the baguette in the fois gras fat then made a cherry gastrique sauce to put over it. Incredibly rich dish but so good. SO GOOD. (the way to make fois gras is really sad. I won't eat it anymore now that I know. But it was so delicious ;-; ) Made a grass fed ribeye. Coated in kosher salt for about an hour then rinsed the excess off. Made the meat incredibly tender.
