Waffles have a better texture to them and pockets for syrup/PB or whatever the youth put on waffles these days. Also chicken and waffles. Also waffles are more consistent when made as there's a specific device for them.

Specific item means extra steps. Anyone can do pancakes easily.

Belgian waffles have a better texture but not freshly made waffles. With pancakes what ever you put on it goes around (relatively) evenly, with waffles it get stuck in the little grooves

It's legit the same amount of steps... 

Grab waffle iron from cabinet > plug in iron > let heat > grease iron > pour batter > flip > remove

 

Grab pan/griddle from cabinet > turn stove on/plug griddle in > let heat > grease pan > pour batter > flip > remove

 

The grooves ensure that you get consistent amounts of toppings in every bite while also providing extra crunch since it's extra surface space in contact with the heat.

Why would you want a little bit of topping/syrup in each bite when you could have it soak up the syrup and have more in every bite.
